Kanta Auntie’s Original Mango Pie

Makes 2 pies

Time: about 30 minutes to prep, plus overnight to set

Ingredients
2 packets powdered gelatin (1/2 ounce total)
1/2 cup granulated sugar
4 ounces cream cheese, at room temperature
8 ounces Cool Whip
16 ounces Alphonso mango purée
2 graham cracker pie shells

Preparation

  1. Mix gelatin and sugar in a large heatproof bowl. Set aside.

  2. In a small saucepan, bring 1 1/2 cups (12 oz) of water to a boil. Pour the boiling water over the gelatin and sugar mixture and stir well to dissolve.

  3. Once the gelatin mixture cools to room temperature, add in the cream cheese, cool whip, and mango purée. Mix with a whisk or wooden spoon until very smooth.

  4. Pour the mixture into the pie shell, and chill overnight.

  5. Serve everyone a slice…and then all night long, sneak slivers for yourself out of your fridge until the pie is gone (it won’t take long).
